Saxon's Glacial Lakes Highlights Flavors of Lush Pastures Along Lake Michigan's Shores

Winter '13 | Vol. 19, No. 2

Glacial Lakes, the new introduction from Saxon® Creamery, gets its name from the glacial lakes and rich glaciated soil near Lake Michigan where Saxon cows graze. This semi-soft, raw cow’s milk cheese develops grassy, buttery flavors and a creamy texture as it ages for three months or more in the Saxon Creamery Cellars.

Saxon Creamery is a fifth-generation pasture-based dairy farm with a commitment to conservation and environmental stewardship. Only the milk from their 450 Holstein-Jersey herd is used to make Saxon’s original cheeses, which also include Green Fields monastery-style cheese, Big Ed’s Gouda, Pastures Cheddar, Saxony Alpine-style cheese and Asiago Fresca.
