HACCP Training for Processors


Dairy Farmers of Wisconsin announces a regional course entitled "HACCP Training for Processors”. Kim Onett from NSF Center for Public Health Education will provide the technical training for the course.

Course Overview

HACCP Training for Processors is a two-day course. This IACET and International HACCP Alliance accredited training program is designed to provide you a thorough understanding of the concepts and application of the Hazard Analysis Critical Control Point (HACCP) method for assessing, identifying and controlling hazards. In this course, you will gain the knowledge, confidence and skills to apply the Codex 12 steps to HACCP to develop, implement and maintain a HACCP-based food safety management system.
This course is a combination of lecture and interactive group exercises which provides participants with step-by-step instruction in preparing a written HACCP Plan. Participants will leave this course with a completed HACCP plan model along with HACCP tools and templates they can utilize in the work place. The course is structured to promote interaction among class members and allows time for questions and review.

Learning Objectives

At the end of the program, learners will be able to:

  • Identify and discuss food safety hazards associated with PRPs and production processes
  • Determine control measures for identified significant hazards
  • Construct and verify a process flow diagram
  • Conduct a hazard analysis of the production process
  • Identify critical control points, critical limits, monitoring methods and corrective actions
  • Verify the HACCP System

Course Prerequisites

Strong understanding and working knowledge of prerequisites programs / cGMPs required.

Learning Assessment

An 80-question multiple-choice exam follows the conclusion of the course. Upon successful completion of the course requirements (attendance and passing score of 70% or greater) participants will receive an NSF Certificate of Accomplishment.

Continuing Education Credits

As an IACET Accredited Provider, NSF Training and Education Services offers CEUs for its programs that qualify under the ANSI/IACET Standard. NSF Training and Education Services is authorized by IACET to offer 1.30 CEUs for this program.
Attendance and successful completion of the course could be applied to numerous professional certifications from organizations such as the American Society for Quality, American Cheese Society, Institute of Food Technologists, and Research Chefs Association.

Course Details

This two (2) day course, sponsored by Dairy Farmers of Wisconsin, is open to all Wisconsin cheese and dairy companies. Attendance will be limited to the first 20 registrants, so please register early. Cost of the course will be $225.00 and will cover registration, all materials, lunch and breaks each day. Due to popular demand, DFW reserves the right to limit the number of attendees to 2 per company per location.
