The Robin is the newest cheese in the award-winning Deer Creek line from The Artisan Cheese Exchange, known for hand-selected, aged classic Wisconsin cheddars, and handmade artisan cheeses like The Fawn and The Stag. Named after the Wisconsin state bird, The Robin is a classic, handmade Wisconsin original Colby made in small cloth-wrapped and waxed wheels.

In his quest to recapture the true essence of original Colby, Chris Gentine once again partnered with Wisconsin Master Cheesemaker Kerry Henning. The Robin showcases true Colby with its firm, yet open and curdy body, combined with a fresh, buttery taste and a pleasant salty finish.
