Red Barn Family Farms Debuts Le Rouge

Created for Red Barn® Family Farms with the help of Wisconsin Master Cheesemaker Jon Metzig of Willow Creek Creamery and the Wisconsin Center for Dairy Research at the University of Wisconsin Madison, Le Rouge, “The Red”, is a Wisconsin original washed-rind cheese, inspired by French-style alpine varieties. 

Le Rouge is a creamy and nutty cheese with a slight peppery finish. Handcrafted in small batches with raw (heat-treated) milk from small family farms, Le Rouge is aged for nine months, developing an edible rind with a beautiful red-orange hue that inspired the cheese’s name.
